Over a decade ago, it was a job with Ontario's Liquor Control Board that led Canadian Josh to discover his love of wine. 'I tasted this wine - a Marlborough Sauvignon Blanc, actually - and had an epiphany,' he recalls. As a nose for wine turned into a virtual obsession, Josh trained with the International Sommelier Guild while completing an Honours degree, which made for an intensive four years of study!
Having previously held sommelier positions in both Thailand and Canada, Josh has also worked in the cellar during vintage in New Zealand, further developing his understanding and appreciation of all things vinous.
He was initially drawn to Nuevo37's spectacular cellar (Nuevo37's starting cellar of over 2,500 bottles was compiled by Dr Ron Georgiou, MW). 'I took one look at the list and I was in,' he says. 'We've got a dynamite Spanish list. It's so comprehensive. And our other key focus is Victoria. I have fantastic freedom: we're always changing the wines available by the glass, offering different degustation pairings week to week. It's very exciting.'
Although he enjoys introducing guests to sherry, Josh's favourite moment on the job is when 'guests leave with a list of the wines they've tried.'
