Executive Chef of the Royce Hotel, Leigh Dundas has trained in some of the Finest Restaurants in both Melbourne and overseas.
Began his career at Tansy's in Melbourne and also worked as Sous Chef at the Adelphi, Pomme and Langtons.
Leigh travelled to London to work with Conran Restaurants and Marco Pierre Whites 'Mirabelle', he also worked at Aqua in San Francisco. On returning to Australia, Leigh also opened Luxe in Melbourne to critical acclaim before joining the Royce Hotel.
