Noosa is a destination for chefs through its reputation as a culinary mecca, 1997 saw chef Paul Leete travel to Noosa for that very reason.
Trained under the talented chefs at Pier Nine and Il Centro, Paul took his skills to Quaglinos in London as Chef de Partie. After spending time in Europe adopting new concepts to develop in his kitchen, Paul and his wife Simone were drawn to Noosa’s lifestyle and opportunities.
Over the 11 years he has been Head Chef for Sails Restaurant, Paul has established a close relationship with our local growers who share his appreciation for produce grown and prepared with integrity. These relationships guarantee that the Sails kitchen is always offered the best and first pick of the season. Paul's preference is to use growers who observe pesticide free, organic and non genetically modified farming techniques.
By using fruit and vegetables that compliment our climate, Paul is able to consistently create menus that reflect the very best our region has to offer.
Accreditation to these farms are often given throughout his menus as a small thank you to their loyalty and professionalism.
