Vas joined Church St Enoteca at the start of 2010 after returning to Melbourne from Sydney. During his time in Sydney, Vas was employed as Executive Sous Chef of Pendolino under culinary luminary Nino Zoccali (the founding Chef of Otto).
Within a year of opening, the restaurant was awarded ‘Best New Restaurant 2008’ and ‘One Chef’s Hat’ in the Sydney Morning Herald Good Food Guide.
Vas’ background in Italian food is vast having also worked at Carmine’s Restaurant, Madame Joe Joes, Cecconis and Dog’s Bar in Melbourne. He has also spent time at Chez Bruce in London and cruising the Mediterranean as Head Chef on the cruising yacht Medusa, where he developed a love of sourcing fresh local ingredients.
